It's been MANY years since I did my deferral so PLEASE call the courthouse to confirm haha...
BUT when I did it, all I had to do was DEFERRAL next to the box that says "I did not commit this infraction" (so not "no contest" and not "guilty") and mail it in. You also have to pay a small processing fee (I don't remember how much this was, I think $30-40?). I never went into court.
Then they basically just put you on probation. For the next year, if you don't get another moving violation then it just disappears. However, if you DO get one then you have to pay the new ticket AND the old ticket (and you forfeit the "processing fee").
Plus you can only defer one ticket every 7 years... it's designed as a solution to the "oops factor" that eventually nearly anyone who doesn't drive like a complete retard gets tagged for a ticket eventually and it's a way to keep a clean record without paying for an attorney, etc.
But like I said, it's been 6 or 7 years since I deferred mine so I'm hazy on the details. Call up the courthouse listed on the ticket and say "hey I'm so-and-so, I got a ticket for 5 over, I live in AZ, I'd like to defer it. What do I need to write on the ticket and what's the processing fee?" It *should* work perfectly as a cheap way to get it dropped and not have to go to court (and it's a guarantee, no worrying about a hardass job to reject your written contest). TECHNICALLY I think they can reject your request for a deferral, but I've never heard of that happening.
