how hot should the bike run after say about 30 minutes of riding?

when does the temp light start to come on

It depends whether you're moving or not. My bike usually stays around 160 to 180 on the highway but can climb to 210 in stop'n'go traffic.

Does anyone know when the light comes on? I have had mine to 230 and was scared but the light didn't come on
