I run Dunlop 209gp's 190/55 on mine. When I bought the bike it was set up for that, and after three days at the track on it, I'm sold on the 190 (dunlop at least). The bike has 130hp anyway, which is a lot more than my 600rr that I ran 180's on, so I can't compare on a performance hit with the larger tire. However, the thing will stick, and I noticed that I could get on the throttle a lot earlier and harder. I haven't had any trouble with turn in either, and it flicks side to side pretty well.
