Default sprockets

I have a 2007 r6s I have gone down one tooth in the front and its just not enough the bike needs a new chain so I figure this is the time to put sprockets on it. I am a bigger guy and can pull the bike up in second at any speed above 55 I would like to be able to pull it up at lower speeds in second or even better pull it up in third at a lower speed like 65. Im not a fan of clutching I would just like some info if anyone that has put different sprockets on their bike. I would still like a bike not something that tops out at 100. I was going to go to a 520 one down and two up but dont know if that will be enough. thanks
